Ingredients :-
1 cup Tuvar dal / toor dal (soaked 30 mins in
water)
1 cup bottle gourd (Lauki) cut into pieces
1 carrot cut in small pieces
1 potato cut in big pieces
1 tomato cut in big pieces
2 pinch asafetida (hing)
½ tsp mustard seed (rai)
2 whole dry
red chillies
5 garlic cloves chopped
Few curry leaves
1 tbsp jaggery
2 tbsp sambar powder
½ tsp turmeric powder
1 tsp salt (as per taste)
2 tbsp oil
4 tbsp tamarind juice
½ liter water
2 tbsp fresh coriander leaves
Method :-
1. Put the washed and soaked tuvar dal in
pressure cooker by adding ½ liter water, salt, turmeric powder and 1 tsp oil, mix
it well.
2. Close the pressure cooker and cook dal on
medium high flame till 4 to 5 whistles.
3. Once the pressure cooker cool down
completely, open the lid and mix dal very well.
4. Again heat oil in a deep vessel in that add
mustard seed, once the mustard seed splutter add red chillies, garlic, hing,
curry leaves and mix it well.
5. Now add potato, carrot, bottle gourd and mix
everything well.
6. Cover the lid and cook for 5 minuites.
7. Now add sambar masala powder and mix it well
and cover and keep for 1 minute.
8. Add cooked dal and mix well add more water
and adjust the consistency.
9. Add tamarind juice and jaggery and mix it well.
10. Cover the lid and cook for 10 minutes or
till the vegetables are cooked.
11. Garnish with fresh green coriander leaves.
12. Serve with Idli, Dosa, Vada or just with
steam rice.
