Ingredients:
2 - Big Brinjal (cut in small pieces)
2 - Tomato (chopped)
2 - Onion (chopped)
2 - Potato (cut in small pieces)
½ tsp - Turmeric Powder
1 tsp - Red Chilli Powder
2 tsp - Ginger and Garlic Paste
1 tsp - Salt (as per taste)
1 tsp - Garam Masala Powder
3 to 4 - Whole Red Chilli
2 tsp - Cooking Oil
Method:
1. Heat oil in a pan, add whole red chilli and let it fry.
2. Add onion and fry till soft. Add ginger and garlic paste, mix well and sauté for 2 minutes, and fry till the raw smell goes.
3. Add tomatoes and cook till they turn soft.
4 . Add turmeric powder, red chilli powder and mix well.
5. Add little water and mix well.
6 . Cover and cook for 2 minutes, or till the masala get fry.
7. Add potatoes and mix well, cover and cook for 5 minutes.
8. Add brinjal and mix well cover and cook for 5 to 7 minutes.
9. Add garam masala and salt , mix well, cover and cook for more 7 to 8 minutes (till the water gets dry of the vegetable)
10. Serve hot with steam rice or chapati.
